The “Safety Gap” in Industrial Beef

Howdy from the Farm!

This week on the farm, we’ve been talking a lot about the “invisible” side of food safety. While we spend our days moving fences and checking water troughs, there is a complex biological world happening inside our cattle that directly impacts the safety of the meat on your dinner table.

I wanted to share some fascinating insights that our Farm Store Manager, Melody LeViner, shared on social media earlier this week. It perfectly highlights why our commitment to 100% grass-fed and grass-finished beef isn’t just about better flavor—it’s about a fundamentally different safety profile.


Understanding the “Safety Gap”

Cattle are natural grazers, designed to thrive on forage. In the industrial food system, cattle are switched to a heavy grain-based diet to speed up growth. This changes their internal chemistry, creating what we call the Safety Gap.

The Grain Effect

In a grain-fed system, the starch ferments quickly, causing a major Acidity Spike in the cow’s rumen (stomach).

  • The “Training Ground”: Most bacteria die in high-acid environments. However, E. coli is incredibly adaptable. In an acidic gut, E. coli “trains” to become acid-resistant.
  • The Gap: When these “tough” bacteria enter the human food chain, they are already primed to survive the high acidity of the human stomach. Because they aren’t killed off by our natural digestive defenses, the risk of infection is much higher.

The Grass-Fed Difference

Cattle fed primarily on hay or grass maintain a more neutral pH in their digestive tract. Because their gut environment isn’t an “acid bath,” any E. coli present doesn’t develop that dangerous acid resistance.

The Result: The bacteria from a grass-fed ruminant animal are much more likely to be neutralized by your own body’s natural defenses. That is the Safety Gap—and grass-fed beef puts the odds back in your favor.


Industrial Systems Are More Likely to Have Industrial-Sized Recalls

We don’t just look at the biology; we look at the results. When you look at the national beef recalls over the past 10 years, the vulnerability of the industrial system becomes clear.

While the official “pounds recalled” number for 2025 was low at 2,855 pounds, that number excludes several massive Public Health Alerts. For example, in June 2025, a nationwide alert was issued for organic ground beef sold at Whole Foods. Because the product was already past its “use-by” date, the USDA didn’t count it in the formal “recalled poundage” statistics—even though the risk to consumers was just as high.


Our Promise: Defeating the “Numbers Game”

At Watson Farms, safety isn’t just about the diet; it’s about the scale.

Industrial recalls often involve hundreds of thousands of pounds because massive regional hubs mix meat from hundreds of different animals into a single batch. This creates a dangerous “numbers game.” If just one grain-fed animal has acid-resistant E. coli, it contaminates the entire industrial run.

We choose a different path:

  • Small-Batch Processing: We use smaller, family-owned processing plants. By keeping batches small and separate, we eliminate the risk of one animal contaminating a massive supply chain.
  • Transparent Chain of Custody: We know exactly which animals are in which batch. There is no “mixing with the masses.”
  • 100% Grass-Finished: We never take the shortcut of grain-finishing, ensuring the “Safety Gap” remains closed for your family.

Dinner at the Farm and Meeting the “Tetris Master” 📦

Last night, the lights stayed on a little later at the farm, but for a very different reason than usual. Our team gathered together for a Team Member Dinner—a chance for us to step away from the daily bustle of the fulfillment room, the pastures, and the store to simply enjoy each other’s company.

It was a full house! Kelly and I were joined by our parents, Alan and Kathy and Gary and June, along with Jay and his wife, our fulfillment manager Daniel and his wife, and Melody (who you likely recognize from the store and our social media) and her husband. We traded our work boots for a seat at the table to share a Greek-inspired feast: Greek chicken, lemon dill rice, a fresh Greek salad, hummus with naan, plenty of Tzatziki, and a light lemon mousse to finish it off.

These moments of fellowship are what make Watson Farms feel like a family, and it’s that same spirit of community we strive to pass along to you in every order we ship.

Hard Choices for a Healthy Farm Leads to a Bright 2026 🚜

Happy New Year, Farm Family!

As we stand at the threshold of 2026, I’ve been doing a lot of reflecting on the past twelve months. If I had to sum up 2025 in a single word, it would be Resilience.

It was a year of incredible growth, but it was also a year where we had to make some hard calls. Today, I want to pull back the curtain on why those changes happened and show you how they’ve prepared us to serve you even better in the year ahead.


The Heart of What We Do

When I look back at the highlights of the year, one moment stands out: mid-summer, turning the herd into a fresh 23-acre paddock of lush Pearl Millet.

This video captures the “why” behind Watson Farms. You can see the 100+ head of cattle moving onto tender forage, the shade structures we built from recycled equipment, and the clean water system we’ve worked so hard to install. Facing the Economic Storm: Hard Choices for a Sustainable Future

Staying true to this mission of transparency and sustainability required us to take a hard look at where we were spending our energy and resources. This led to two major shifts that I know were big adjustments for our long-time customers:

  1. Discontinuing the Pastured Egg Enterprise: We know this was a hard change to swallow. However, it was a necessary pivot to ensure our farm remains sustainable. By narrowing our focus to our core strengths—100% grass-fed beef, pastured pork, and pastured chicken—we have better positioned ourselves to serve you with the highest quality meat possible.
  2. Restructuring Shipping and Delivery: Transitioning our delivery structures was another significant change. While it altered the way some of you receive your orders, it has allowed us to become more efficient and reliable, ensuring that our products reach your doorstep in peak condition without the overhead that threatened our farm’s stability.

Most importantly, these changes keep the farm profitable. At the end of the day, profitability is what ensures this land stays in production and allows the next generation to continue this mission one day.


A High-Energy Start to 2026

If this past week’s “Fill the Freezer” in-store special was an indicator of what 2026 will be like, then we’re looking forward to a great year.

We had a huge response, and I want to say a sincere thank you to everyone who came out to Lowrys to shop with us. Seeing the store that busy and meeting so many of you in person was a powerful reminder of why we do what we do. If that response was a preview of the year ahead, we are ready to hit the ground running.

Pigs, Parades, and Christmas Preparations

A Christmas Tradition in Lowrys

If you’ve lived in our neck of the woods for any length of time, you know that the Lowrys Christmas Parade is no ordinary event. It’s a step back in time, a celebration of rural life, and a gathering that seems to grow larger every single year. This past weekend was no exception, with thousands of people lining the streets!

One of the things that makes the Lowrys parade so special is its “horses and tractors only” rule. There’s something truly nostalgic about the sound of old engines and the clip-clop of hooves instead of the usual sirens and modern trucks.

As has become a tradition for us, Watson Farms was proud to have a float in the lineup. This year, we decided to give the crowd a little glimpse of farm life by pulling our hog cart behind the tractor, complete with four of our little pigs. It was a joy to see the faces of the children (and the adults!) light up as they saw the pigs rooting around. Noah stayed busy in the back section of the cart, making sure no one left empty-handed as he threw out plenty of candy to the massive crowd.

We even won Best of Parade – Farm Animal!

The weather couldn’t have been better, and it was a great reminder of why we do what we do. While we don’t get off the farm a whole lot during busy periods like this, getting to interact with so many of you in our community—and seeing the excitement for our animals—is a highlight of our holiday season.

Important Holiday Shipping Update

As we move into the final days of the year, we want to make sure everyone is aware of our shipping schedule so you can plan your meals accordingly.

With the upcoming UPS holiday schedule and the high volume of orders, we want to ensure every package arrives fresh and on time. Our shipping capacity for Monday, Dec. 22 has been reached.

  • Current Shipping Status: Any orders placed now will not ship until the week of January 5, 2026.
  • Farm Pickup: While UPS shipping is taking a brief holiday break, Farm Pickup is still available! This is a great option if you need to stock up on grass-fed beef, pastured pork, or pastured chicken for your New Year’s celebrations.
  • Resuming: We will return to our regular shipping schedule the week of January 5 and will work hard to get all accumulated orders out to you as quickly as possible.

Winter Moves for the Red Wattles

Hey everyone,

We hope you’re staying warm as we get deeper into December. Out here on the farm, the seasons dictate our rhythm, but the work of moving animals to fresh pasture doesn’t stop just because the temperature drops.

In this video edition of Pasture Posts, we wanted to bring you along for a “pig paddock shift.” We just moved a group of about 30 Red Wattle pigs to a new paddock, and they wasted no time getting to work on some volunteer ryegrass and hunting for acorns.

One of the things we pride ourselves on is that our pigs live a far different life than the 97% of hogs raised in industrial confinement. Instead of concrete, these guys get green grass, fresh air, and the thrill of rooting around in the woods. We move them about once a week to make sure they don’t overdo the disturbance to the land—you can actually see in the video that the paddock they just left still has some green in it.

Keeping Them Cozy

You might wonder how they handle the mid-December chill. We keep a couple of wagons in the paddock with them to offer shelter from those cold winter rains. When the weather gets really rough, we blow dry straw into the wagons. It acts kind of like a blanket; they can burrow down into it and stay nice and warm.

It’s all part of ensuring they live as good a life as a pig possibly can here in the Piedmont of South Carolina.

Why the Big Plants are Closing (And What It Means for Us)

We certainly enjoyed the downtime and the chance to gather around the table, but as we head back into the weekly rhythm of the farm, there’s some heavy news in the cattle world that I feel is important to share with you.

We often talk about how different Watson Farms is from the “Big Four” meatpackers. And in almost every way that matters—how the animals are treated, how the land is managed, and the nutrient density of the final product—we are worlds apart. But this week, a major headline reminded us that we are all swimming in the same economic stream.

You might have seen the news that Tyson Foods is closing its massive beef plant in Lexington, Nebraska. This isn’t just a small blip; this is a facility that processes huge numbers of cattle. When a plant like that shutters, it’s a symptom of a much larger problem: there simply aren’t enough cattle in the United States right now.

The U.S. cattle herd has shrunk to its smallest size in decades. Years of drought, high input costs, and economic uncertainty have forced many ranchers to sell off their cows. The result is a historic shortage of calves.

Here is where the unexpected similarity between us and the giants like Tyson comes in.

While we finish our cattle on lush, regenerative pastures rather than in confinement feedlots, we generally don’t breed all our own calves from scratch. Like the big packers and feedlots, we have to go out into the market and purchase “feeder cattle” (young calves) to bring onto our farm for grass-finishing.

Because the national herd is so small, the competition for those calves is fierce. Whether you are a massive industrial feedlot or a direct-to-consumer regenerative farm like ours, the cost to acquire cattle has skyrocketed. In fact, we have had to pay more for cattle this year than ever before in the history of our farm.

The prices for these calves have hit record highs, and that puts an immense amount of pressure on our business.

Economics 101 would say that when our costs go up this much, our prices should follow immediately. And if I’m being honest, looking at the spreadsheet, we probably should have raised our beef prices significantly in the last 6 months to keep up with the market.

But we didn’t.
