This roast is from the loin section where the NY Strip Steak would normally come from and is an excellent choice for roasting the perfect Sunday dinner!

Roasting is a technique used for cooking a meat that is uncovered with minimal to no moisture. Here are some helpful roasting tips:

  • Remove roast from refrigerator and let it set at room temperature for 1 hour before cooking.
  • Cook at 450 degrees for first 10 minutes, turn oven down to 350 degrees and finish cooking. A good rule of thumb to follow is approximately 10-15 minutes per pound.
  • A meat thermometer is helpful to ensure your roast is not overcooked. Remove when internal temperature reaches 120-140 degrees for rare to medium doneness. Cooking to these temperatures will give you the best results.
  • Cover & let stand for 10-15 minutes before slicing. The roast continues to cook another 10 degrees (approximately) once removed and this also helps redistribute the juices and seals in flavor.
